These tasty treats can be served as an entrée, a tasty side, or as an appetizer. They are relatively simple to make, and are a fun alternative to classic meat pies!
Mini Cheeseburger Pies.

A unique take on tasty little cheeseburger treats! Makes 16 standard cupcake sized pies.
Crust Ingredients
- 1 Cup Butter Chopped, Chilled
- 1 1/4 Cup Coconut Flour
- 1 tsp Xanthan Gum
- 1 tsp Granulated Sweetener (e.g. Swerve)
- 1/2 tsp Salt
- 6 Tbsp Cold Water
Hamburger Ingredients
- 1 lb Ground Beef
- 1/4 whole Onion Diced
- 1/2 (62 g) Tomato Diced
- 1 tsp Worcestershire Sauce
- 1 tsp Oregano
- 1/2 tsp Salt
- 1/2 tsp Rosemary
- 1/4 tsp Garlic Powder
- 1/4 tsp Ground Black Pepper
- 1/2 Cup Shredded Jack Cheese
Crust Instructions
- Prepare butter by chopping into cubes, and thoroughly chilling.
- Measure flour, xanthan gum, sweetener, and salt into a food processor.
- Pulse once or twice to blend.
- Add butter, pulse until crumbs form.
- Slowly add cold water, pulsing until small balls form.
- If dough presses together and holds then it is done, if it still crumbles pulse in a little more water until it holds.
- Form dough into a tight ball but do not knead, cover or wrap in plastic wrap and refrigerate for at least a half hour.
- Preheat oven to 350°F.
- Take dough from fridge and press into greased cupcake pan to form the small pie crusts, should make about 16 little crusts.
- Use a fork to poke holes in bottom of the raw crusts and press the edges with the tines.
- Bake at 350°F for 15 minutes.
Pie Instructions
- Preheat oven to 350°F.
- Brown and drain hamburger in a fry pan.
- Dice onions, dice tomatoes and add to drained hamburger at medium heat.
- Add in Worcestershire Sauce and all seasonings.
- Continue to cook at medium heat until tomatoes and onions are at desired consistency.
- Spoon even amounts of hamburger into pre-baked pie crusts.
- Top with shredded cheese.
- Bake pies for 5 to 10 minutes at 350°F, or until cheese is as melted and crispy as desired.
Additional Notes
- Top with a little mayonnaise, ketchup, small pickle slices, or sour cream to add a little more flavor, but be sure to adjust the nutritional information accordingly.
- Allow to cool some before trying to remove from cupcake pan.
- Cut out circles of parchment paper to fit the bottom of the cupcake cups to make removing the pies a little easier.
- Shortening (chilled) can be used in place of butter in the crust.
- For fewer calories per pie, use a thinner crust, making more than 16 crusts.
