Mini-Cheeseburger Pies: Low Carb

These tasty treats can be served as an entrée, a tasty side, or as an appetizer. They are relatively simple to make, and are a fun alternative to classic meat pies!

Mini Cheeseburger Pies.

A unique take on tasty little cheeseburger treats! Makes 16 standard cupcake sized pies.

Crust Ingredients

  • 1 Cup Butter Chopped, Chilled
  • 1 1/4 Cup Coconut Flour
  • 1 tsp Xanthan Gum
  • 1 tsp Granulated Sweetener (e.g. Swerve)
  • 1/2 tsp Salt
  • 6 Tbsp Cold Water

Hamburger Ingredients

  • 1 lb Ground Beef
  • 1/4 whole Onion Diced
  • 1/2 (62 g) Tomato Diced
  • 1 tsp Worcestershire Sauce
  • 1 tsp Oregano
  • 1/2 tsp Salt
  • 1/2 tsp Rosemary
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Ground Black Pepper
  • 1/2 Cup Shredded Jack Cheese

Crust Instructions

  1. Prepare butter by chopping into cubes, and thoroughly chilling.
  2. Measure flour, xanthan gum, sweetener, and salt into a food processor.
  3. Pulse once or twice to blend.
  4. Add butter, pulse until crumbs form.
  5. Slowly add cold water, pulsing until small balls form.
  6. If dough presses together and holds then it is done, if it still crumbles pulse in a little more water until it holds.
  7. Form dough into a tight ball but do not knead, cover or wrap in plastic wrap and refrigerate for at least a half hour.
  8. Preheat oven to 350°F.
  9. Take dough from fridge and press into greased cupcake pan to form the small pie crusts, should make about 16 little crusts.
  10. Use a fork to poke holes in bottom of the raw crusts and press the edges with the tines.
  11. Bake at 350°F for 15 minutes.

Pie Instructions

  1. Preheat oven to 350°F.
  2. Brown and drain hamburger in a fry pan.
  3. Dice onions, dice tomatoes and add to drained hamburger at medium heat.
  4. Add in Worcestershire Sauce and all seasonings.
  5. Continue to cook at medium heat until tomatoes and onions are at desired consistency.
  6. Spoon even amounts of hamburger into pre-baked pie crusts.
  7. Top with shredded cheese.
  8. Bake pies for 5 to 10 minutes at 350°F, or until cheese is as melted and crispy as desired.

Additional Notes

  1. Top with a little mayonnaise, ketchup, small pickle slices, or sour cream to add a little more flavor, but be sure to adjust the nutritional information accordingly.
  2. Allow to cool some before trying to remove from cupcake pan.
  3. Cut out circles of parchment paper to fit the bottom of the cupcake cups to make removing the pies a little easier.
  4. Shortening (chilled) can be used in place of butter in the crust.
  5. For fewer calories per pie, use a thinner crust, making more than 16 crusts.
